Slow-Carb 100 - Day 7
Breakfast
Boiled eggs, lentils and broccoli.
Roll on lardy rest day on Saturday.
Lunch (1145)
Chicken, lentils and a salad (peppers, carrots, cucumber, tomatoes).
Snack
Chicken, cauliflower, lentil and kidney bean soup. (1445 and again at 1800)
To make, take a chicken carcass from a roast chicken and boil up with two carrots and an onion. Celery preferably but I couldn’t get it. Simmer for 1 hour. Strain. Put back the pieces of chicken meat, carrot. Add another onion, 2 small floreted cauliflowers and enough (use your judgement) drained lentils and beans. You will need to soak these the night before in water if dry. Simmer for 1 hour. Use a blender to make a smooth soup.
Dinner
Steak, lentils and broccoli.
Too many red wines before at the bar (3, 2 allowed…)
